Excellent and knowledgable service (in English!). Began with an excellent martini featuring Spanish Nordés gin. The house bread/focaccia was much more interesting than I'd expected. Onto a local beef belly and kimchi croquette, which was quite smooth consistency, with very crisp exterior. The fried artichoke with cured eggyolk was full of umami, with a smoother grits-like consistency. Lastly, I finished with the octopus, and found the mole to be subtle and sweet. Nice view onto Gran Via also. One thing I didn't love was the playlist of acoustic cover songs of popular American music. Not horrible, but kind of distracting.
Very interesting food prep. Great view o er the Gran Via. Located in the Hyatt hotel on 2nd floor. I had the fried artichoke with cured egg yoke. The yoke is placed in soy sauce for 12 hours and is placed in the center. The artichoke sits on a bed of mushrooms with foam. Once the yoke is broken the yoke, foam and mushrooms makes a bit of a broth. It was excellent. And I had the short ribs. Very tender. For dessert, the coconut flan with passion fruit, amazing flavors. Of course win with dinner, very good wine list.
